Ingredients:
- 2 chicken breasts, cooked and shredded
- 1/2 cup plain Greek yogurt
- 2 tbsp mustard (Dijon or yellow)
- 1/4 cup celery, diced
- 1/4 cup red onion, diced
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 1 tbsp lemon juice (optional)
Instructions:
- In a large bowl, combine the shredded chicken, Greek yogurt, mustard, celery, onion, and parsley.
- Stir to combine and season with salt, pepper, and lemon juice if desired.
- Chill for 20 minutes before serving. Serve on whole-grain bread, crackers, or over a salad!
